What is Mead?

Mead is wine made from the sugars in honey instead of or in combination to those found in fruit like grapes. The basic chemistry to wine making? Yeast and sugars are needed for fermentation to occur. Where those sugars come from hold the unique natural flavours that will embody the wine it makes. Whether the wine is sweet or dry is up to the winemaker and the traits they feel accompany those natural attributes best. Currently we have two varieties available. Starting with our “Traditional Mead” it’s a tribute to the old world style mead, using seasonal wildflower honey this mid sweet mead holds clear floral essence with notes of caramel.  Our second is a “Cranberry Melomel” which is mead with a touch of Bala cranberry. Wildflower honey and cranberry tartness blend together for a sweet honey finish. Our third offering will not be available until Summer is our first dry offering, An “Apple/Rhubard Cyser”  using pure Ontario apple cider, wildflower honey and our farm grown rhubard!
